It all started when…

fate brought us (Daniel and Kristin) together at Crown Casino back in 2002. From that point, we have been inseparable - a 25 + year journey in the hospitality industry, running some of Melbourne’s finest establishments and being the founding owners of The Noble Experiment.

The Noble Bootleggers concept emerged from our time behind the bar - The Noble Experiment, a New York inspired speakeasy bar and restaurant showcasing experimental cocktails - a haven for those seeking bold flavours and boundary-pushing experiences. The transition from crafting cocktails to venturing into the world of distilling sprouted when a customer asked if we could extend the experience beyond the bar's confines. With that simple request, a seed of possibility was planted, and from it grew the flourishing idea that would eventually redefine our journey. In 2018, we sold the bar, to devote ourselves to family and seeing where this ‘distilling thing’ would take us.

As we jumped head first into our next adventure, Dan immersed himself in learning his craft in our Manor Lakes garage. Kristin, a Hospitality Lecturer at William Angliss, delved into sustainable practices and menu design, which has paved the way for a future PhD focusing on sustainable regional development and the distilling industry.

In December 2019, we found our forever home in Longlea, a patch of earth we lovingly call "Whisky Hill Farm." Our current 12 x 6m shed, where we distil our creations, is a mansion compared to our humble beginnings. The goal for the year is to build a larger site, welcoming visitors and expanding our operations.

But we are not just about distilling spirits; we are stewards of the land. With Kristin's pursuit of sustainability and the relocation to Greater Bendigo, we’ve forged deep connections with the environment. Waste streams from production find purpose - spent botanicals become soaps, feed goats, or enrich the soil. We also embrace other's organic waste streams, to regenerate our land - working in partnership with other producers and restauranteurs.

Our story thus far has been one of resilience, ingenuity, and a dedication to bold flavours. Along our path, we've consistently challenged norms, crafting offerings that elevate cocktail experiences, while embodying a deep-seated commitment to sustainability, community, and unwavering quality. As we raise a glass on Whisky Hill Farm, our legacy of The Noble Bootleggers will continue to evolve, a testament to the enduring spirit of two pioneers who dared to dream beyond the bar.
