Back where it all began….

BACK WHERE IT ALL BEGAN…

It all began back at The Noble Experiment with a 5 litre Tokay seasoned American oak barrel and a smoky Islay whisky. The results were delicious.

Taking key learnings from the first experiment, Dan’s next project was to create unique whisky flavour profiles. Three barrels were seasoned each with a different flavour - Pedro Ximenez, Spanish Grenache and Botrytis sticky white wine. When the whiskies were ready, we showcased them at one of our whisky tasting nights and the feedback we received was very positive.

After running a successful Pozible campaign, our first independent bottling was released in late 2016 - Noble Bootleggers X Starward - Pedro Ximenez finish.

Since then, we have continued to release independent bottlings, and we will continue to do so. But we have also been working on our own whisky. We are very excited to announce that the third installment of our experimental expressions is ready…

Noble Bootleggers Single Malt - Experimental Whisky Series - Batch 3

The next instalment in our experimental whisky series. This is a limited release with only 60 bottles produced.

This expression has been matured for three years in a 100L red wine cask and finished for two years in a 100L ex-STARWARD apera cask.

TASTING NOTES:

NOSE: Very soft, velvety feel on the nose… Warming with autumnal feels. Rosy red apple lollies and red toffee/taffee apples. Lots of butterscotch with hints of cedarwood and pinecones at the back. Notes of hot buttered raisin toast.

PALATE: The mouthfeel is waxy, luscious and velvety. It leads into hits of pink fruit tingles, red currant jelly and toffee syrup. Delicious and deep notes of dark ginger cake soaked in butterscotch sauce. Bursts of cinnamon, cloves, nutmeg and black pepper dance around in the back.

FINISH: Medium to long - hazelnuts enveloped in milk chocolate. Fades into dried dates and figs with a black pepper feel.
