The Zesty Peach
60ml Noble Bootleggers Citrus Gin
30ml Peach puree
10ml Freshly squeezed lemon juice
Garnish: lime peel twist
Add all ingredients to a cocktail shaker filled with ice. Shake and double strain into a Nick & Nora glass. Garnish with a lime twist.
To make the peach puree:
8 Fresh Peaches (Or 2 1/2 Cups Frozen Peaches)
30ml Lemon juice
Pinch of Salt
1 Tablespoon Granulated Sugar
1 Tablespoon Water (As Needed)
Wash the peaches if you aren't going to boil them. Defrost peaches if you're using frozen ones. Either peel your fresh peaches or blanch in boiling water to remove the skin. Remove pits. Alternatively, if peaches are not in season, tinned peaches are another good substitute.
Blend peaches with 30mls lemon juice for 2 minutes until completely pureed. Add a pinch of salt and sweetener to taste. If using tinned peaches, sugar may not be required.
If needed, add a tablespoon of water to thin it, if the mixture seems too thick.
